The Wailing (2016)

need:
* mushrooms
* bacon (or veg equivalent)
* brioche buns (or regular hamburger buns if you’re saving the extra $ - the sweetness of brioche really makes it pop, though)
* fresh tomato
* avocado
* butter (could also use favorite tasting oil)
* salt & pepper
* semi-optional: fresh thyme
* optional/veg replacements: fresh greens/chopped romaine, caramelized onions, minced garlic (added with bacon), diced cucumber

my total cost: ~$17, shopping sales
leftovers: plenty of bacon, buns, butter and thyme left
cost to acquire another serving, factoring leftovers: ~$4-5

cut desired amount of bacon into chunks and cook it in a pan for a few minutes, until it’s lightly browned. chop up your mushrooms how you like them - about a full cup per serving (but they shrink, so don’t be afraid to add extra) and toss them in with the bacon. if you’re using thyme, add that in now too, and a little goes a long way. cook for a few minutes until the shrooms begin to soften and alter the color of the grease.

add in your butter - i use a teaspoon or two per serving. continue to cook until the bacon is decently done and the mushrooms have shrunk and become darker. lightly season with salt and black pepper to taste. cut heat just low enough to keep it warm. have your brioche buns toasting.

spoon out all the bacon/mush onto a plate with a paper towel on it so the extra grease gets absorbed off. grab your toasted buns and moisten the inside of them by running them over the leftover oils in the pan like you’re playing air hockey.

split and de-core your avocado, spoon out your desired amount (i like about half an avocado per serving) and mash it with a spoon if you don’t like it a little firmer. also a decent time to slice your tomato - throw a little salt on your tomato slices, too, but not too much. i use three thinner slices per serving, and serve the rest on the side with the other half of the avocado.

lay out your oiled buns, side by side. avocado them, then spoon your mush/bacon mixture over that, then arrange your tomato slices on top. order doesn’t really matter, that’s just how i like to do it. you can eat it with a knife/fork, but if you’re a maverick like me you eat it like pizza and make a mess.
